Cheesy Lasagna Soup

Ingredients:
1 pound ground beef (can use combo of beef and sausage)
1 medium onion, sliced
2 large green bell peppers, cut into 1-inch pieces
2 garlic cloves, finely chopped
2 cups water
2 cans (14 1/2 ounces each) diced tomatoes in olive oil, garlic and spices, undrained
1 can (6 ounces) tomato paste
2 cups uncooked mafalda (mini-lasagna noodle) pasta (4 ounces), rotini or shells also OK
1 T packed brown sugar
1 1/2 teaspoons Italian seasoning, crumbled
1/4 teaspoon pepper
1 1/2 cups Italian-style croutons
1 1/2 cups shredded part-skim mozzarella cheese (6 ounces)
Cook beef, onion, bell peppers and garlic in Dutch oven over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown and onion is tender; drain. Stir in water, diced tomatoes and tomato paste. Stir in pasta, brown sugar, Italian seasoning and pepper. Heat to boiling; reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until pasta is tender. Set oven control to broil. Pour hot soup into 6 ovenproof soup bowls or casseroles. Top each with 1/4 cup croutons. Sprinkle with cheese. Broil soup with tops 3 to 4 inches from heat 1 to 2 minutes or until cheese is melted.
Stuffed Pepper Soup

Ingredients
2# Ground Beef
1 Can Tomato Sauce 28Oz
1 Can Diced Tomatoes, Undrained 28Oz
2 Cups Cooked Long Grain White Rice
2
Cups Chopped Green Bell Pepper
2 Beef Bouillon Cubes
1/4 Cup Packed Brown Sugar
2 Teaspoons Salt
1 Teaspoon Pepper
In a large saucepan or Dutch oven, brown beef; drain. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until peppers are tender. Yield: 10 servings.
Friday Night Hangout Recipe – Shrimp Chowder

Ingredients
2 cans of cream of potato soup
1 can of whole kernal corn
1/2 stick margarine
1 large chopped onion
1/2 teaspoon cayenne pepper
8 oz. cream cheese (can substitute 1/3 less fat cream chese)
1 pint milk (2 cups)
1 pkg. frozen salad shrimp
Saute onion in the margarine with the cayenne pepper. Add soup, corn, cheese and milk. Heat until cream cheese melts. Add shrimp. Simmer for another 15 minutes. (Note: I doubled entire recipe to make what we had at the youth gathering on Sunday.)
Friday Night Hangout Recipe - 7 Can Soup (a Weight Watcher Recipe)

Ingredients
2 cans of Ranch Style Beans
2 cans of corn
2 cans of Minestrone Soup (condensed)
1 can of diced tomatoes
Place all ingredients in a large pot and heat to a boil. Simmer about 15 minutes or as long as you like. |
